boring weekend stuff - in questions

Woah! I'm pooped. But i have some questions. Nothing major. But all answers totally appreciated!

1. Chicken breast recipes - i just bought 10 kilograms of individually wrapped boneless skinless chicken breasts. Organic and free range. Very expensive. But i never cook with breasts. Really i just make whole roast chicken. Send me your favourites!

2. My wrists - are on fire! I spent the last few days typing a huge report for the school. Is this why my wrists hurt? Will it go away? Diary of a wimp here.

3. Bed Wetting - my six year old, toby, still wears a pullup to bed. I know not a big deal, we don't make a big deal of it. But what should i be doing aside from the getting him up to pee, limiting water after dinner... all the regular things. We are heading into sleepover territory and it gets complicated.

4. What do you think of Big Love? Personally, i loved it.

1. I like them soaked in italian dressing and then bbq'd. My kids like them baked with 2 cans of mushroom soup served with rice.

and yes, this is probably why your wrists hurt and unless you give them a break, the pain won't go away (took me 3 months).

and for your little boy, here's my experience. Sean and Will are 4 now. what I did was put a potty next to their beds so that they don't have to really "get up" at night. it was easy for Sean, but it took more time for Will. sometimes he would wet the bed 3 or 4 times a week, but a friend of mine told me this was a phase I had to go through. so I kept waking up, changing him, changing the sheets and put him back to sleep at 3am. after about a month or so, it stopped.

Make a marinade of equal parts olive oil and lemon juice, add assloads of chopped garlic and fresh ginger. Marinate for a while, then bake (still in marinade). Add mushrooms for fun and for real fancy stuff, cover with a bit of feta cheese 5 minutes before it's done baking.

YUMMY! Theya will even eat it!

Take each breast and make a pocket on the underside. Put about 1 tablspoon or more of cream cheese into centre. Add whatever spices you like (I put greek sometimes, italian others). Fold it up and hold it together with a toothpick or small wood skewer. You can wrap in bacon if you're inclined. Bake at 375 for 15 minutes or so. We call them chicken presents.

Or dice and marinate them in olive oil, lots of garlic, peppercorns, lemon and whatever tickles your fancy. Put on skewers, 5 or 6 at a time, grill and eat hot or cold.

Grill on a grill pan to keep the juicy. Smother then in onions, peppers and jack cheese.

Chicken pot pie? Chili? Tacos?

If you make chicken tacos do you just dice it and fry it up in taco spice?

Also:
Grind/crush stale garlic croutons, add a bit of flour and other seasoning (dill is good).
Cut chicken into strips, toss in a bag with the crumb mix & fry in a bit of butter. Easy breaded chicken fingers!

Yep. Just like that. Sometimes I mix ranch dressing and salsa together when I make chicken tacos.

Queen of chicken here:
1. Dip in egg, dip in breadcrumbs, saute in oil. Everyone's favorite here.

2. Dip in egg, dip in flour, saute in hot oil (with garlic). Take chicken out. Put 1/3 cup wine, 3 tbs butter, juice of 1 lemon, 1/2 can of chicken stock in pan. Bring to boi. Put chicken back in.

My 4 year old is still peeing. Uncanny ability to keep pull up dry for months. The day we switch to underwear, he pees. Don't ask me...

I started reading the marinade recipe in chair's post and thought "ooh, i can't wait to see how this going to help bedwetting..." Duuuuh.

I have no recipes because I am a miserable cook but my husband makes an awesome chicken parmesan by pounding the hell out of chicken breasts, soaking them in whole milk for an hour or so, dipping in egg, breadcrumbs, then frying them in olive oil. Then he puts them in a baking dish smothered with some high-grade marinara and topped with fresh mozzerella slices. Pops the dish into the broiler for like 3 minutes and voila. Sounds a little labor intensive i know, but oh my f-ing god so good.
